Cultural appropriateness and sustainable diets

There are four key elements to a sustainable diet: environmentally friendly, healthy, economically viable and culturally appropriate. However, little attention has been paid to the latter element.

What is ‘culturally appropriate’ food in the context of a sustainability transition? What does culturally appropriate food mean in a globalized food system and within our culturally highly diverse cities? These questions are essential to ensure an inclusive food system transition.
