Demi holds a bachelor's degree in Biomedical Sciences from Maastricht University and a master's degree in Nutrition and Health from Wageningen University. During her masters, she specialised in global nutrition, public health, and healthy and sustainable diets. Her thesis looked into nutrient adequacy and food-based dietary guidelines adherence in three districts in Vietnam, and how this was influenced by the food environment. Her internship at Table got her in touch with healthy and sustainable food systems, which became a big interest of hers. Upon graduation, she started working as a project assistant in the Farming Systems Ecology group, where she amongst others helped out with the coordination of different projects, organisation of events and outreach activities. After a year of working in this position, she started her PhD in January 2023 in the same group under supervision of Hannah van Zanten (FSE) and Alejandro Parodi Parodi (FSE). Demi's PhD project focusses on food system redesigns that can guarantee food security under climate change pressure in Europe.
